YELLOW PITAHAYA
Description/Flavor: The yellow dragon fruit has an oblong shape and is slightly smaller in size than the more common red varieties. The fruits are approximately 10 centimeters long and 7 centimeters wide. Their size depends on weather conditions and they are often classified into three different size groups. Its thick yellow skin is covered in small knobby bumps, which when unripe show small spines that will fall off naturally as the fruit ripens. Under the skin is a dense white pulp containing numerous small, edible black seeds. Yellow dragon fruit has a crunchy, juicy texture and a very sweet tropical flavor with floral touches and no acidity.

Yellow dragon fruit are the fruits of a climbing cactus known for its large, fragrant flowers that bloom for only one or two nights. Known botanically as Selenicereus megalanthus or Hylocereus megalanthus, the fruits are also known as yellow dragon fruit or yellow dragon fruit. This variety is considered the "royal" yellow pitaya and is said to be the sweetest of all dragon fruits.
Nutritional value:Yellow dragon fruit is a good source of magnesium, phosphorus and potassium. They contain dietary fiber and protein and greater amounts of calcium than red-skinned varieties. They provide small amounts of iron, vitamins A and C and niacin. Yellow dragon fruit is a good source of antioxidants and beneficial fatty acids. Edible seeds contain high amounts of omega-3 fatty acids that are beneficial for a healthy heart.
